Winners of the 4th Annual Concours de tartes aux fruits

A record crowd of close to 100 attended Portland’s 4th Annual Tartes Contest last Tuesday at the Oregon Culinary Institute. The annual event is a fundraiser for the nonprofit Alliance Française de Portland.The three master chef judges for the 2011 Best Fruit Tart Contest Over 23 entries were submitted by Portland-area pastry chefs.

The entries were judged for appearance, texture, taste and technique. Judges were (from left) James Beard award winning chef Philippe Boulot of the MAC and the Heathman Restaurant, Tiffany Christy of St Cupcake, and Pascal Chureau of Brasserie Montmartre and Allium Bistro.

First prize went to Helena Root of Irving Street Kitchen for her tart featuring orange short dough crust, coconut mascarpone and a passion fruit curd. Second place went to Alissa Rozos of St Jack for her tart of almond frangipane and lemon crémeux with apricot glaze. Third place was awarded to Amanda Ames of Chez Joly for her tarte de mûres et citron. 

The field included chefs from Allium Bistro, Andina, Aquariva Italian Kitchen, Artisan Cake Company, Beaverton Bakery, C’est si bon, Chez Joly, Covarrubias, Four and Twenty Pastries, Irving Street Kitchen, Oregon Culinary Institute, Original Dinerant, Petite Provence Bakery & Bistro, Pix Pâtisserie, St. Honoré, St. Jack Restaurant, Sweet Ambrosia, The MAC, Urban Farmer at the Nines, and Wildwood Restaurant.
