Cheese Seminar and Tasting

Frenchman Sebastien Roustel, Oregon State University’s Cheese Maker in Residence, will offer a free seminar on Thursday, November 3, at 7:00 p.m. at the Portland Marriott Downtown (1401 SW Naito Parkway), followed by a sampling of select cheeses.

Roustel is responsible for research and development at ENILBIO in Poligny, France, and directs the Franc-Comtois foundation for food and culture within the French Academy of Sciences. The Portland seminar topic will be “To Pasteurize or Not To Pasteurize: The Great Raw Milk Cheese Debate, A French Perspective.”
